Alright: preparations for my departure to the northwest are proceeding according to schedule. new drivers license- got it. new playlist- finished. I have been somewhat of a recluse lately I suppose one could say, in the sense that I have only gone out one night so far.

I consider it more of a prioritization of my life though, I am not going to be here for that much of the summer and then I leave for Sweden in the fall so I find it important to allocate a large chunk of my time to hanging with my family, pets, and those closest to me. On that note, yesterday was wonderful: ran errands, hiked with august, made pizza from scratch for dinner, treated myself to new martha stewart magazine and yummy bars ;)

Word on the street is that every day you learn something new, well today’s tidbit of knowledge is related to my hometown here in New Mexico.

Evidently Albuquerque is 5th leanest city in America! According to Men’s Heath (http://www.menshealth.com/mhlists/metrogrades-fattest-cities/) it is beat by Austin, Seattle, Washington DC, and San Francisco but is above Portland and Denver. It is kind of neat to know that you grew up in an environment where fitness and health is prioritized, but I never realized exactly how much of an impression it has made nationally.

in other news–I am officially settled in each of my homes, after officially relinquishing my dorm keys yesterday at approximately 12:45.

INTERRUPTION IN TRAIN OF THOUGHT:

I was wondering just yesterday why I didn’t go get my nails done more often, but after a mother-daughter pampering excursion (times two, jen and her mom joined us) I was rudely reminded while showering at the gym: My toes are ALREADY messed up! I love dark colors on my nails, but that choosing a dark red showcases any minor flaws that occur. Such a bummer, but I absolutely refuse to not run so I guess my nails’ appearance will be sacrificed.

BACK TO ORIGINAL TOPIC:

I an unbelieveably sick and tired of cleaning, organizing, packing, loading and unloading. Yesterday, after lugging all my belongings to my mother’s house and unpacking that, I returned to my dorm and cleaned for two hours, then loaded up again, dropped some things at Goodwill, got to my dad’s and just spent an hour unpacking and organizing THAT. Whew, feels nice to have my two rooms back in tip-top shape though I must say.

All that left me utterly tuckered out, plus the fact that in between loading up my car and dropping things off at goodwill I made a two hour gym trip. I did weights for the first time in FOREVER, for at least 45 mins, and then thirty minutes of sprints. I was not too tired, however to cook!

I took a mini nap while half watching julie/julia in the afternoon which inspired me to get off my butt and kick off ‘cook week’! I first made apple brownies, they were incredibly easy and totally delicious!

What you need:

2/3 cup butter (P.S. Cut out a third of a cup of butter and swap in a half-cup of applesauce instead)
2/3 cup brown sugar
1/2 cup white sugar (P.S. I know, I know–sugar!–but this is sort of desserty, so stay with me here. Consider cutting out a tad, if you want to. Apples are sweet enough on their own!)
2 eggs
1 cup flour
1/2 cup whole wheat flour
2 t. baking powder
1/4 t. salt
1 t. vanilla
2 t. cinnamon
1 cup apples, chopped fine

Prep:

Cream butter and sugar. Add eggs and vanilla; mix well. Add flour, baking powder, and salt and cinnamon; stir well. Stir in apples, nuts, and raisins. Bake in a greased and floured 9 x 9 pan at 350° F. for 35-40 minutes.


Followed by some sweet potato fries through the instruction of this lovely lady and some carrot fries as well using the same recipe. We chowed down on those with our dinner of pad thai, made my Kristen while I did some yoga. All in all the past two days have been utterly fantastic and it looks like it is going to be a b-e-aUUUUUUtiful summer.

Whew, finally back home where I belong! The past couple of days have been monumentally hectic but I finished my last final at approximately four this afternoon, packed up my stuff, and am back at home relaxing on my porch freshly showered at 7:30.  I couldn’t decide what I wanted to eat specifically so I made a smorgasbord of yummy things..chicken, whole foods chips, an apple, salsa, hummus, diluted cranberry juice..mmm.

My DVR is going to be completely overloaded because I need to catch up on basically all the shows I like from the last four weeks or so, maybe eight weeks actually! Ah, I just haven’t had time to watch tv, which I am not complaining about it was supremely nice but now I see what I’ve been missing!–30 rock, kendra, the office, real housewives, the hills, house, just everything.

In effort to spend the last of my lobocash and la po meals I made a quick pit stop  at an on-campus convenience store and the cafeteria before I headed to the heights. Packing up all of that food was seriously a nightmare, there was so much it could feed a small country. When I unpacked it at home my mom was like ‘Well I guess we don’t need to go grocery shopping this week’. My last la po meal was sad for me so I took a picture, I’m chronically sentimental I can’t help it!

I’m going to enjoy this night of relaxation because tomorrow is another busy one for me:

  • interview for an article,
  • pick up final load of stuff from dorm/ clean it for final check out
  • sell books
  • return library books
  • make shopping list for cookfest 2010!
  • something else that I no doubt am forgetting but you can see it is preeety busy

I am such a geek, I made a schedule of things I should do each day so I will have a plan to fall back on and avoid getting sucked into laziness. Tonight however, no plan so my inner LAZINESS IS REJOICING!

Alright it’s official, I am destined to become a baby theif! There is no reasoning with me, so don’t even contemplate trying. Seriously though, I dragged my mom to ‘Babies’ yesterday for the first showing (11:50!) of the first day it is out in the only theater in town that was showing it in honor of Mother’s day. I can honestly say there were no males in the theater..or at least willingly in attendance. It was so good though (how could it not be, it’s a recipe for success) I really recommend it, if you have a vagina you will appreciate it fa show!

Then we went out to lunch at the Daily Grind, which is my new favorite coffee house..well one of them. I think it’s funny that I finally feel at home and love it down in Nob Hill literally two weeks before I have to move back to the heights, that’s life though. The food was DELICIOUS, we split a turkey and green chile wrap.

So I sent my momma home with some of my belongings, packed up some MORE and took’em to my dads house for mother’s day part two. Kristen made delicious food for us: chicken salad, regular salad, avocado, and fruit with angel food cake for dessert. I don’t really like angel food cake, but the fruit was delicious so chowed down on that.

Jen and I finished up the evening with an impromptu viewing of a show at Winnings, we went to go get tea and ran into someone going to it. I love all the music shows I’ve been going to lately, music is such an enriching experience.

I’m pretty sure i am getting a sunburn just thinking about going outside right now. yep, it’s that sunny. not that i’m complaining necessarily, but i cannot go for a run in the burning atmosphere that is Albuquerque at the moment so i’m stuck in my room listening to wilco and drinking the rest of this morning’s coffee.

I LOVELOVELOVEEEE this time of year for the most part though, its not flesh singing hot yet but its nice enough to wear dresses and no makeup :) i have not worn any form of makeup in like two weeks. im not kidding, i just dont care what i look like anymore because its so beautiful out there no one is looking at little old me!

Despite being utterly mind numbing, today was relatively productive. Had a three classes, an article, a fantastic salad for lunch(made from la po!!) AND i gotttt my housing sitchh under control for my internship in D.C this summer but WOW was it ridiculously priced. anyways i will be residing Francis Scott Key #410 in george washington university for the month of July.maybe i shouldnt put that on the internet.. please dont go there, hide in my closet, and kill me when i’m in the shower online creepers! thanks.

BLAH well as long as i’m sitting here brain-dead and in serious need of physical activity i might as well catch up on my housewives watching! i dont care what city you are in real housewives, i am perpetually addicted.

Eggs with a side of homework.

blech, i find it disturbing that today has been so busy considering I had exactly zero classes! I suppose I could of broken up some of the work for today if I had not spent SEVEN hours in bed yesterday afternoon. After the run for the zoo jen and I hit the sauna/hot tub/steam room followed by la po and then i fell into bed and DID NOT GET UP. no judgement people, I had not had a chance to breathe or rest all weekend!

With 9 days, 9 hours, and 27 minutes until the freedom of summer becomes official I am just beginning to comprehend what that means. Obviously we all desperately covet summer break, it marks utter freedom in a fashion unique to students alone because once we enter the ‘real world’ we will no longer have the luxury of summers off.

The exciting thing about summer is reuniting with relocated friend but the frustrating thing for me though is that some of the people I am most in need of seeing I will not see until May 24th so I have two weeks up for grabs and no idea what to do with my time. I inevitably will end up vegged in front of the tv stuffing my face haha and doing nothing, but ideally I would like to actually do something fun SO I am beginning to think of some ideas.

IDEAS

  • First off, I want to hike often because it will not be as readily available to me in Sweden so I just want to be enjoy New Mexican sunshine and nature to the fullest extent.
  • I want to read FOR PLEASURE (preferably in aforementioned sun) because though I read all the time currently, it is not the things that I would choose for myself.
  • Also, I have big plans to conduct a Julie/Julia style cook fest, but based off of recipes I find on other blog sites.I have been scrounging the internet in my spare time instead of facebook and have found an immense community of talented culinary masters of health, and I want to give it a try. I cant afford to do it with my money right now so it will fit perfectly for me to come home and use the grocery funds to feed my family for a week or two.
  • I want to drink coffee on my porch every morning, I am blessed with the most spectacular view and I miss it when I’m down the hill at UNM. Also, going to the pool is a must. BY THE WAY jen and I discovered the magic that is Midtown’s sauna..it is far superior to highpoints and well worth the commute. It even has eucalyptus in it!! and a steam room..whoa why does highpoint suck.

I had a fantastic lunch of sushi (minus the rice hah the little lumps looked funny all naked on the plate) and, are you ready for this, green chile mashed potatoes!!! I am an avid believer in green chile’s ability to escalate any dish’s delicious factor. Well, maybe not everything..like not ice cream..WAIT no that sounds awesome! hm.. welp now coffee and a chocolate chip cookie are powering me through this post and an article :)

Alright, I have officially misplaced my credit card and my mind. I’m actually concerned more about the credit card because even if I found my mind I would still be unable to purchase new shoes. It is officially the weekend for me, and only one week of actual classes left!! I am keeping myself busy, I took out the recycling and am now taking the first wave of junk back up to my parents house in OPERATION MOVE BACK HOME.

All my junk is going to have to be transported in phases considering I am such a hoarder (whoreder some might say..) BUT at least I am a responsible little clutter-nut! The amount of things I brought to my dorm at the beginning of the year has at the very minimum quadrupled.

I am really going to miss my lobo cash because even though I have a ridiculous amount left, the Sahara platters are the bomb. Seriously, baba ganoush is my absolute favorite thing to put in my mouth–don’t even begin thinking anything dirty hahah.
