crackle

With finals around the corner for everyone, I am fully aware that this is not the time to brag about enjoying having little to no responsibilities at the moment–but that is not going to stop me!

I have always had the tendency to jam pack my life with activities that keep me rushing from place to place at all times, until now! Well, technically until Sweden where I had ABSOLUTELY nothing that I needed to do. So I guess I have to have a little bit of responsibility to keep me grounded.

Yesterday was seriously such a great day, I cannot hold in the boasting. I had coffee and breakfast with one set of parents, then drove in to town and met my mom for coffee and an impromptu shopping session where two of my favorite items were purchased–books and sweater!–then a work meeting, went to jen’s house and cooked, then went to early thanksgiving potluck where at least 6 of my favorite things occurred–including but not limited to eating, drinking, friends watching (the tv show hahah), laughing, etc., then i drove home to my cozy bed and read before falling asleep.

Although I know it will catch up with me this winter break when I am at school from 8:30 am to 9pm for two weeks straight, it is supremely nice that my schedule looks like this

Clearly, less than rigorous.

Considering how little I HAVE to do, it is interesting how busy I have managed to become anyways. I find myself at my computer a surprisingly little amount–facebook creeping down to a minimum ;)

I celebrated this week’s Tuesday in style, ‘in style’ meaning, of course, that I did not leave my mom’s house once I arrived from my dad’s.

‘I did not leave’ meaning, of course, that I did leave the house to run a vitally important errand.

The aforementioned ‘vitally important errand’  was, of course, going to Sunflower and going a bit overboard. I may have bought too much, but at least it was cheap!

for only that! let me just say that i love how cheap produce is.

Anyways, after finishing my article early I was left with a noon-thirty hungry belly, no further obligations, and a fridge full of produce so I did the only thing that one can do in this situation.

for future reference, kale chips with cayenne pepper are REALLY good. Go light on the pepper though–they get super spicy!

One of the many perks about being a temporary transplant from another place is that responsibilities are minimal. That being said, I have class for approximately 5 hours every week and aside from that I have quite a bit of free time on my hands.

So what was a girl with no class to do on a dreary Thursday but to cook dinner for some lovely ladies?

My first inclination was to make some salmon considering I have yet to eat it out here where it is plentiful and cheap, despite it being a staple back home where it is neither. This all changed when I arrived at the grocery store after the 6km bike ride filled with fog and drizzle.

At that moment I realized only one thing would do–vegetarian chili! and apple crumble.

So I started grabbing cans of beans and corn and vegetables left and right, then biked the goods back to my place and got baking.

Yep, baking.

On my own. If you can call it that, considering it actually was the easiest recipe ever and was mostly chopping.

but I remain quite proud :)

Cooking commenced shortly thereafter, and the girls came over around 7

We had germany, america, and france represented at the table and two swedes on the couch. International chili!

It was deemed edible and I have yet to hear of any ailments after eating it so it looks like my first dinner in sweden was a success!

Going out to Platå followed, which is always a good time mainly because it frequently involves tequila and dancing.

 

Alright, considering my new expertise in all things culinary (i kid, i kid) I have devised a recipe for the erasmus student experience. You ready? here it is. let it cool after you take it out of the oven :)

 

Kallie’s perfect recipe for using up free time

5 cups laughing

1/2 cup studying

3 cups going out

1tsp missing home

5 gallons coffee (a day)

1 cup eating

and a sprinkle of hangover

Soooo I’m pretty positive that my corridor mates all think that I am a freak-o psychotic-killer-pedophile-extraordinaire.

This probably does not come as a surprise to some of you, but for those of you who have deluded yourselves into considering me a normal human I will spell out the reasons why:

My beet consumption habits. Sounds innocent enough, except that the process of cooking them leave the kitchen looking like a crime scene.

Alright, now where was I? AH yes, that’s right.

The fact that they can probably hear me playing my ‘Sounds of the Rainforest’ soundtrack through the night to help me sleep paired with my odd hours of coming and going, occasional morning vacuuming sessions essentially serves as more exhibits and therefore solidifies the perception of my oddness hahah

I’m not saying this in a negative way at all, I find myself rather entertaining truth be told, and if you are entertaining yourself that’s all you can really ask for.

Geez I should really take a nap, but my bed was so lovingly made by yours truly for once and I really have no desire to mess that up.

P.S  Do you see Top Chef playing on my computer? Yep.

Seeing as I have significantly reduced my coffee intake recently, I should not be surprised that I was still feeling the effects of a five o’ clock grande black coffee at almost one last night. I was feeling slightly fatigued when Kemp and I opted out of hanging with the gang at eleven thirty, but after brushing my teeth and settling down with my book before bed I realized I was too antsy to catch any zzz’s.

I am slightly cursing myself for not joining Leah in her choice of herbal tea over coffee yesterday afternoon, but I figured I would go ahead and begin writing a post to clear my head and possibly tire myself out.

Father’s Day was filled with cooking (any excuse I get these days I swear). I had stayed out a bit late the night before so I crashed in town at my mom’s house, and the drive out on Sunday morning to my dad’s was CRAZY pretty. Driving while taking pictures is obviously not advisable I realize BUT on did it quickly, while not looking at the camera, and strictly on straightaways.

I feel as though I can’t say that I made a salad or vegetable dish from scratch because I didn’t grow the veggies in some garden or something..what exactly qualifies something as being from scratch?! That term just sounds gross in my opinion, but I diverge..’From scratch’ or otherwise IIIITTT was delish of course and the weather cooled down a bit so it was pleasant eating outside.

MMmmmK people fast forward a bit to Monday!!

Can be described in two words : lazy day. I drove into town early, got my oil changed, hung out with the boy–he was subjected to two episodes of the O.C. in exchange for some quality world cup watching–grabbed coffee with leah and then dinner with my mom, and then Kemper and I headed off to Morgan’s to hang out with everyone.

Over our dinner conversation I was reminded by my mom of all the things that I was unaware of about my looming internship. I realized I had a multitude of questions about the dorm where I would be staying, what the dress code is, the hours involved, etc.

I arrived home and jotted down these questions to call about in the morning but realized with a little online research that I had all the information at my fingertips.

Here’s some things I discovered!

What my room will look like–I WILL HAVE A KITCHEN AND BATHROOM!! I will share this with one other person so hopefully the other intern and I are of the same political party…hahah. Actually that is not really a concern, considering I have a step dad and boyfriend who do not share the same political views as I do and I love them just the same :)

Also I cleverly figured out where I would be commuting to and from campus to Capitol Hill every day using a little thing I call Google Maps..perhaps you have heard of it? Total distance is 3.1 miles on the dot. So unbelievably tempting to forgo the metro and rent a bike instead but I have been assured that aside from the problematic heels+skirt+bike issue that it will be RIDICULOUSLY hot and humid and therefore a horrible idea to attempt to walk and or bike to work.

YIKES I have so much to do before I leave. Gotta get my stuff together for my Swedish Visa, call the internship office with my questions, do laundry and pack (duh), spend time with all my loved ones, work (if I ever manage to stop being such a sketch-ball writer..I swear I don’t know what it has been about this past month but I feel flakier than a croissant), etc.

Overwhelmed is an understatement.

Saturdays provide the perfect opportunity to use the word ‘shenanigans’ because that is what they are often filled with.

On Saturday it is fitting to make breakfast for boys with your cute best friend..

…and wonder why they have some odd things in their fridge..

..it’s alright to spend two dollars on iced passion tea on your way to buffalo exchange…

…and of course you should lay out in the sun with said best friend for two hours and your puppy but NOT take any pictures, so posting a picture of friday night’s dinner instead because it was delicious..

…taking it easy on a Saturday night is alright if you use that time to catch up with old friends and be jealous of their new boobs. (obviously no pictures of that either hahah) but speaking of jealousy..

I am pretty convinced that the contributors of Real Simple magazine are secretly running the world, with a little help from Oprah and Andy Cooper of course. ;)

It is truly sad that I can spend hours on their website, in particular reading about their ‘new uses for old things’:

IT’S FASCINATING!

I am proud of myself for three reasons this morning:

1) I slept in until almost 9!

2) I did not let the 10 am Albuquerque heat scare me away from a run outside

3) I went all 4.93 miles without walking (heat makes me tired)

It was a nice run I suppose one could say, it took me about 35 minutes so I was going pretty slow and it was flat. I had a hard time because the coffee to water ratio was off balance so I was dying of heat and in need to water. Nothing a few glasses of lime water couldn’t fix though!

I downed those while looking at realsimple.com and checking my email and then ate some leftovers from yesterday’s girly brunch. We had a potluck type thing at my house before heading out for thrift store shopping.

Jen made a berry pie, Leah and Molly made a pizza and cinnamon coffee cake, and I made spinach, tomato and basil egg whites with a fruit salad.

It was a HUGE meal, so much so that I was not hungry again until we went out for Brad’s birthday. It was probably one of the nicest restaurants I have ever been to– it was a hidden steakhouse and you had to have a password to get in! I got a realllly good salad with olives and artichoke hearts, tomatoes and peppericinis, it had so many flavors that it didnt even need dressing.

I love dressing up :) That brings us to now. I am pleasantly exhausted, once again hanging on my porch after eating great food. Jen literally just popped by while I was reheating breakfast–i have had to get rather creative considering we do not have a microwave right now–she was on a bike ride by my house and we are going to go to REI later and get her a backpack for her Europe trip. I can believe I wont see her until the end of July after Monday!

If you notice, there is an absence of coffee in this breakfast. CRAZY I KNOW. :)
