There are no words that could adequately convey all that was our trip to Rio, much less express the the fiascos that we encountered and the giggles that ensued (the hilarity of our situation was realized only post-catastrophy).

Let it suffice to say that our trip was consistantly punctuated by beverages–periodic espresso stops by day, acai by the beach, and alcoholic choices for the nighttime. The rest I leave up for your interpretation through the following pictures.

Tessa and I have in recent months fostered a love for Satellite’s rabbit wraps. Though it always is incredibly difficult to justify paying $5.50 for some vegetables encased in a tortilla, we have faithfully forked over the money for the better part of the spring semester while complaining about it the entire time.
I have more than a slight hunch that they infuse the dressing with some crack-like substance because no matter how many times I tell myself that I refuse to pay for another one, my will power is absolutely diminished by the time lunch time rolls around and I find myself 9 dollars poorer (after mandatory additional coffee and tip) and once again ashamed that I paid such extravagant prices for something I could so easily make.
So, seeing as it is now summer and time is more readily available. I am no longer constrained to prioritizing convenience over all else–and therefore my first culinary mission was deemed to be the replication of this particular wrap.
The first step was to look up the ingredients used in the wrap, located on the Satellite website.
Next, necessary modifications were determined–lemon dressing to replace the pomegranate, omission of sesame seeds, and apples instead of jicama. Mainly, these modifications occurred due to the availability of products at Trader Joe’s. Post TJ’s frolicking session (which is usually a bi-weekly event at the very minimum) I had all the ingredients.
Finally, Operation Reconstruction officially commenced.

RABBIT WRAP:

Prep work:

Massage the kale with the juice of two lemons and 2 TBSP of olive oil, set aside.
Chop half of one apple, half of one roasted red pepper, and a handful of (pre) shredded carrots

Assembly:

Smear hummus on a tortilla
Layer kale on tortilla
then your chopped ingredients
don’t forget the artichoke hearts!
roll up and enjoy!
little bit of advice: buy tortillas large enough to hold all of your ingredients!
but if you fail to do so, as i did, you have no choice but to get another tortilla and eat it quesadilla style (which, actually, is quite awesome and some might say preferable from the start!)
put any leftover vegetables into Tupperware for future rabbit wrap assemblage ;)
The best part of all, is that the ingredients used to make numerous rabbit wraps all added together come out to be as much as a single lunch at Satellite so not only can you easily customize your own wrap but it is freaking cheap too (leaving you more money for wine, of course! I have priorities..).

Due to my literature class’s current focus on structuralism and deconstructionism, I have been hyper aware of social and cultural structures and how my world fits around them. We all like to think that we are individually unique, and for the most part we all are, but it is still a peculiar feeling when you realize you totally embody a cliche.

One day you look around and get this eerie sensation of pluralism…

You look at your ever-overflowing recycling pile and notice a particular trend..

and that your sink is perpetually full..

and you mix dollar pre-packaged rice with fresh vegetables as a contribution to a barbeque

and you spend your Saturday afternoon AT a barbeque

and yor turn on your camera the morning after attending a reggae concert with friends and you find pictures that you do not recall being taken..

 

(Scratch that, you simply take into account that you went to a reggae concert.)

Looks like I am a typical college student hahah when did that happen?!

So in exciting news, I went on a Saturday cleaning spree that included taking out the recycling. Our glass bottle pile officially only looks minorly alcoholic!

I also mopped. sawweeeet, I know.

Sadly, this effort did nothing to quelch my grouchyness, nor did crepes made by best friend this morning. Possibly a trip to Whole Foods and a nap can save me..

AND SOUP! I made another batch the other night during a romantic evening with two of my favorite people–of course it included the three s’s

Sex and the City, Situps, and Soup. ;)

 


The fourth “s” was included earlier in that day with some good, old-fashioned silliness! (in conjunction with a fifth “s” SKYPE). Why does everything wonderful begin with an s all of sudden?

Except snot. Definitely not okay with that.

Philosophy of Soup

I have this theory and before you ask, yes it does involve soup. of course.

It goes a little something like this..

When your world becomes turbulent, insisting on violently tossing you about  and you can’t quite seem to grasp any shred of normalcy there is only one remedy to set your mind straight.

Step one: Breathe. Take one of those deep, life changing breaths that center you and invigorate you more than any cup of coffee could possibly accomplish.

Step two: Put on your apron, slippers, put on some jazz, and gather your gaggle of vegetables.

Step three: Chop your little heart out–dice your frustrations out on the cutting board. As the carrots, potatoes, zucchinis fall away into little fragments under your knife and your multicolored army swells across your counter begin to toss them into a large, bubbling pot. Your troubles will evaporate with the sensational smell of your comforting creation.

Step four: Have a glass of wine..or two..while you patiently await the soup to form.

Step five: Eagerly ladle a bowl far to large for common sense, sit down, close your eyes, and enjoy.

There is something about that first steaming bowl of jumbled goodness created by you that is comforting and satisfying in a way that escapes definition. People ask why I talk about soup in a mildly obsessive manner, it is rather bizarre I realize, but it really comes down to this indescribable correlation associated with safety and love that is perpetually nestled in my brain .

Though I have paralled the soup experience with..other things..my affinity for this mind-mending method stems from something much deeper. There is never a time when soup will not fix a bad day.

So. On the darkest days when your head is hopelessly tangled in knots that you cannot even fathom beginning to unravel, give it a try. This simple act is essentially a reminder to slow down, meditiate upon the simple beauty of the world.

Plus, you get to eat at the end–and honestly what is better than that?

Well there is some bad news, some good news, and some cookie news!

Without a doubt cookies get their own category.

Good News:

  • I managed to sever the bond the couch had made with my ass.
  • I had a great hour at the gym
  • I know what I am doing for everyone for X-Mas! I will need some help for a few of them so I’ll let you all know soon ;)

Bad News:

  • Lowes is out of baby cactuses
  • I did not get anything else done that I wanted to today
  • I set out to buy x-mas presents, but instead bought 26 dollars worth of baking supplies for..
